What is the name of a doctor who specifically deals with puncturing or what specific kind of therapist deals with acupuncture?

An acupuncturist. Often practitioners of traditional Chinese medicine offer it as well. You might be interested in looking for a holistic health practictioner (a doctor of osteopathy or a holistic nurse practitioner) who combines elements of Eastern and Western medicine.

a licensed or certified practitioner for acupuncture. You want a specialist not just any old "Joe Doctor" doing this. there are Chinese and Japanese acupuncture techniques. I am thinking about one for my shoulder since I just developed some pain after a good break from tennis but now there is a pain I never had before as I know they help for sports injuries, pain and fertility

I think most only practice acupuncture, look at their title. I used to go to an AMD, that's someone who is schooled in acupuncture and chinese herbal medicine. All persons who practice acupuncture here in california need a state license.

They're called "acupuncturists." To be clear, acupuncturists aren't doctors. They're acupuncturists. Some anesthesiologists I know dabble in acupuncture as a way to control chronic pain in some patients. Not all of them do so however.
